I would like to create the entire family tree of my entire village (bottom-up) and there are obviously multiple families, I've tried to disconnect the people but they disappear from the view. How can I manage this case?

Job Waterreus Depending on the number of profiles you add them to a project, so you could find them from the project. Project members could edit those profiles (would probably be impractical for a large number of profiles).
Why would you try to disconnect profiles? You might be able to find those profiles again by looking at your recent activity (https://www.geni.com/revisions) or if longer ago by downloading your activity from your account settings (https://www.geni.com/account_settings/download_activity).

Job Waterreus You can use create branch (https://www.geni.com/family-tree/create_branch) to create separate branches if you do not yet have a connection between the different families.

Job Waterreus No you cannot see unconnected branches in the same view, but you could add a link to each branch to a project. If you sort the names it should not be too difficult to find a branch again.
You can merge profiles to connect branches or connect a branch to the Geni World Tree.
