If a profile which I manage is deleted by another manager and I undelete it, is the person who deleted it able to see it that it has been restored? I'd prefer not to get into an delete/undelete/delete war over a profile. But I would like to maintain the integrity of my tree. I'd like to restore this profile, and set it privacy settings so that I alone can view it.

The delete and undelete revision with timestamp and who did it will be visible in the revision tab of the profile. If you make it private and the person who deleted it is not within the family group of the profile he/she cannot see it.
The basic question is: Who is/was the manager? If you were one of the managers you have the full right to undelete it, unless the profile breaks any of the Geni terms, like violating someones privacy.
If someone deliberately deletes you profiles you can alert one of the curators to immediately help you since we can temporary suspend a user, - You can also use the Report option in the Actions menu on that users profile to alert Geni staff.

The easiest solution for you to avoid a conflict with a user is just to re-add the profile instead of undeleting it.
You should however ask yourself the question: why did this person delete it? - ref the Geni terms.
Many users forget that they are in a shared tree and start deleting shared profiles because they plan leaving Geni, so contacting that user telling the problem and asking why would probably be a good idea. You could for example offer your help to delete his immediately family when he/have closed the account.
