I have ancestors listed with dates going back to the 1500's yet my timeline starts at 1807. I have tried to change the date but it always reverts to 1807.

There were a problem to view a family group in Timeline which have been there for years. Only a claimed profile will be listed in the Timeline. They had just fixed it yesterday.
That changes might had also fix the range problem. I had just checked mine have a range between 11 and 2015 by default.
Suddenly it came to my mind, do we have any profile which is dated before century(BC)? ;)
