I've done some searching in help and community posts and haven't found a straight-forward answer to the question I've posted in the title of this post.
Can someone detail those differences? Or perhaps direct me to some existing information that details the differences?

As far as I know there would be a difference in the messages about profiles.
A manger get specify that a message must be sent to him/her when certain actions are taken on the profile. See https://www.geni.com/account_settings/notifications
There are probably more differences, but this would be most noticeable.

From what I see, the "account_settings" that you mention only affect "your family" and "people you follow". Neither of these is "manager" or "collaborator".

That depends a bit. As far as I know you follow automatically any profile that you are a manager of. May be you can unfollow, I have not tried that.
As far as I know you do not follow all the profiles that have a manager you collaborate with.
There also is one specific mail setting: deletes a profile I manage
I will look and see if I can find some documentation on it (That will take some time)
