Deleting Profiles

I have come into information for one of my great grandparents that is more accurate as to their father. The parents that I connected her to are not her parents. When I try to delete them, I get a message that I would need to delete from the beginning of those family lines. 

Or is there someone who has the ability to cut off those lines?

  It may depend on whether you are splitting the tree when you sever the relationship (using the Relationship tab when you click Edit).  But try adding the new parents and maybe connecting their tree to an existing branch before you sever the old ones and see if that works.  If all else fails, contact a curator for help.
